Characteristics
The Novello - or new oi - is the freshest oil, the first oil of the season; synonymous with fullness, vivacity and with a rich fragrance. Its production is limited and can be found only from November to January. It is unfiltered so it preserves a flavor of oil from other era and has the rich fragrance of just-picked olives.
The opacity of the product guarantees its purity.

Taste
Genuine and robust, typical of unfiltered oil.

Fragrance
Intensely fruity.

Ideal
A condiment for roasted meat, salads and country style dishes. Excellent on toasted bread
